Easy Greek Salad

Super easy, bursting with flavor and full of nutrition!

Tip: Make this salad ahead of time and when you are ready to eat an individual portion, use a slotted spoon to dish some of the salad into a single serving bowl, and top with dressing and feta cheese.

Easy Greek Salad

2 cups chopped tomato

1 cucumber, peeled and sliced

1/3 cup diced shallots (you can also use red onion but I prefer the milder taste of shallots)

½ tsp oregano

½ cup sliced olives

Reduced fat Italian dressing (Ken's Lite Northern Italian with Basil and Romano or Newma's Own Lighten Up! Light Balsamic Vinaigrette)

Feta Cheese

Combine the tomato, cucumber, shallots, oregano and olives in a large bowl. If you are going to serve the salad right away, toss with the dressing and then top with the feta cheese.
