One Bowl Two Minute Egg Burrito Bowl

Cook's Note: Every microwave has a different wattage so different ovens may require cooking times that are different from the time I have here. The first time you are making this, make note of how long it cooked in your microwave so you can repeat.

Line a small bowl with one soft taco size Whole Wheat or Corn Tortilla. Crack 2 eggs onto the tortilla and use a fork to break the yolk and lightly scramble. Top with 1 slice of sliced Reduced Fat Cheddar or one ounce shredded reduced fat sharp cheddar. Cover with a microwave cover.

Heat in the microwave for 1 minute. Remove from microwave and stir the uncooked egg.

Place back in microwave and cook another 20 seconds. Check that the egg is done to your liking, if not, continue to cook 10 second increments. Make note of how long it took for the next time you make this. Once done, top with salsa, low-fat sour cream or avocado.
