Chicken or Turkey Parmesan

  • ˝ cup grated parmesan
  • ˝ cup breadcrumbs
  • Salt and pepper to taste
  • 2 egg whites
  • 4 turkey or chicken breast fillets (6 ounce each)
  • 2 tsp olive oil
  • 2 cups fat-free marinara sauce
  • 4 ounces part-skim mozzarella

    Heat oven to 400. Mix parmesan, breadcrumbs, salt and pepper in a large shallow bowl. Beat eggs in another large shallow bowl.

    Pound each turkey or chicken breast to 1/2 inch thickness.

    Dip each turkey or chicken  fillet into egg white than dredge in breadcrumb mixture, turning to coat all sides. Set aside.

    Heat oil in a large nonstick skillet over medium high heat. Add turkey or chicken  and cook 3 minutes each side, until golden brown.

    Meanwhile, spray a large baking dish with oil spray or coat with oil. Remove turkey from skillet and place in baking dish I one layer. Pour marinara sauce over top and sprinkle with cheese. Bake seven to ten minutes, until cheese melts.

    Approximately 410 calories per fillet, 59 grams protein, 16 grams carbohydrate, 13 grams of fat.
