This recipe will end your dilemma of how to give pork a more “Oh Wow!” taste. It is great for your everyday casual dinner or a sumptuous Cuban feast. Mojo is a Cuban sauce that has a bright, tangy, citrusy, garlicky flavor that is harmoniously blended. Super easy to make ahead of time in the slow cooker with just few simple fresh ingredients.
Cuban cuisine is creative and makes the most of typical staples and transforms them into something tasty and tempting. I’ve assembled some healthier Cuban-inspired side dishes for you to pair this flavorful stew with.
- A salad composed of any combination of lettuce, avocado, cucumber, radishes, jalapeno, black beans, pineapple, tomatoes, red onion, or feta cheese with a lime vinaigrette.
- Black-Eyed Pea Salad with red peppers, corn, and cucumbers.
- Baked plantains, just seasoned and bake.
- Black beans with sautéed onion, pepper, cumin and oregano and garlic.
- Rice with Corn (Arroz con Maize): Flavored with green onions and olive oil.
- Roasted Cuban Zucchini: with paprika, chili powder, cumin, cotija cheese and cilantro.
- Roasted Chickpeas: Just drizzle with olive oil, add a sprinkling of sea salt, and bake them until crispy.
- Rice.
- Crusty whole grain bread.
Recipe for Crockpot Cuban Mojo Pork and Sweet Potato Stew Recipe
Total Time 7 hr 15 min Prep 15 min Cook 7 hr Serves 6 generously Difficulty: Easy
Ingredients
- 2 pound, uncooked sweet potatoes, peeled and cut into 1/2-inch pieces (about 2 large potatoes)
- 2 pounds pork loin, uncooked lean trimmed, cut into 1-inch pieces
- 4.5 oz. can green chilies
- 2 -14½ oz. cans diced tomatoes
- 2 garlic cloves, minced
- 1/2 cup orange juice
- 4 medium, chopped green onions or scallions
- 1 ½ tsp salt
- 2 tsp ground cumin
- ¼ tsp dried oregano
- ¼ tsp black pepper
- ¼ cup fresh lime juice
- ½ cup fresh cilantro, chopped
Instructions
Place sweet potatoes, pork, green chilies, tomatoes, garlic, orange juice, scallions, salt, cumin, oregano and pepper in a 5-6 quart slow cooker.
Cover and cook on HIGH setting for 6-7 hours or until sweet potatoes and pork are tender. (My crockpot takes 7 hours but I give a range of cooking time because each slow cooker may cook slower or faster than another. It will just take using yours and getting use to how it cooks to figure out where your cooker will fall in the range of cooking time).
Stir every couple of hours.
Stir in lime juice and cilantro and stir.
