Instructions
- 1 Tablespoon oliive or canola oil
- 1 white or yellow onion, diced
- 12 to 16 ounces 93% lean ground beef or turkey
- 1 (15 oz.) can diced tomatoes with or without green chiles
- 1 (15 oz.) can beans, drained (black beans, pinto beans, kidney beans, a combo, or whatever you like)
- 1 packet Taco Seasoning Mix, spicy or regular
- Optional toppings: chopped white, red or green onion, reduced fat sour cream, lime wedges, sliced avocado, cilantro, olives, salsa, hot sauce, diced jalapenos, shredded reduced fat Mexican cheese, sliced cucumbers, sliced radishes, corn chips or tortillas
Add 1 Tablespoon olive or canola oil in a large pan. Heat to medium-high, add the onion and sauté for 2 minutes.
Add the ground beef or turkey to the pan over medium-high heat stirring frequently, breaking apart with a spatula as you cook.
Add remaining ingredients to the pan and 1/2 cup water and stir to combine. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 5 to 10 minutes.
Serve immediately, with optional toppings if desired. Or, store in a sealed container for up to 4 days.
