Instructions

12 to 16 ounces 93% lean ground beef or turkey

1 white or yellow onion, diced

1 (15 oz.) can diced tomatoes with or without green chiles

1 (15 oz.) can beans, drained (black beans, pinto beans, kidney beans, a combo, or whatever you like)

1 packet Taco Seasoning Mix, spicy or regular

Optional toppings: chopped white, red or green onion, reduced fat sour cream, lime wedges, sliced avocado, cilantro, olives, salsa, hot sauce, diced jalapenos, shredded reduced fat Mexican cheese, slied radishes, corn chips or tortillas 

 
Add 1 Tablespoon olive or canola oil in a large pan.  Add the onion and sauté the onion and sauté for 2 minutes.

Cook the ground beef or turkey over medium-high heat until browned, stirring frequently.

Add remaining ingredients to the pan and stir to combine. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 5 to 10 minutes.

Serve immediately, with optional toppings if desired.  Or, store in a sealed container for up to 3 days
