Freekeh is young, roasted green wheat. The young wheat is harvested then set on fire so only the straw and chaff burn and not the seeds. It tastes and has the texture like barley but with a subtle smokiness. If you haven't tried you have to!

Freekeh comes in both a whole grain and a cracked version. The grain cooks in only 20 minutes and can be used as a side dish, in pilafs, soups, salads, as a breakfast cereal or in a main dish.
Because it's a whole grain, freekeh is highly nutritious. ½ cup cooked made from ¼ cup dried has 90 calories, 3 grams of protein, 4 grams of fiber, is high in iron, and is a good source of niacin, vitamin B6 and magnesium.
Freekeh is a good source of the antioxidants zeaxanthin and lutein, both of which have been associated with prevention of age-related macular degeneration. (Macular degeneration is a leading cause of vision loss in Americans 60 years of age and older).
It has a low glycemic according to the Academy of Nutrition and Dietetics and is recommended by many dietitians as a healthy complex carb. Whole grain GI: 43 units Cracked GI: 55 units.
