This recipe is designed with convenience in mind, making it ideal for small kitchens and outdoor cooking. The colorful combination of shrimp, colorful bell peppers, and red onion not only looks great but also provides a nutritious boost.
Get ready to impress your friends and family with this healthy and flavorful meal that's also a showstopper on the plate!
The Lawry's Sweet Basil, Citrus & Garlic Rub is an excellent choice for shrimp skewers because its bright citrus notes, savory garlic, and aromatic basil perfectly complement the delicate flavor of the shrimp and its versatility makes it a perfect all-in-one seasoning for a variety of dishes to keep on hand in a small kitchen.
Here I have served it with Rice-a-Roni Long Grain and Wild Rice alongside Costco's Sweet Kale Salad Kit.
Rainbow Shrimp Skewers Recipe

You can use metal or wooden skewers. If you plan on using wooden skewers soak them in water for an hour prior to threading them.
Thread four 16-20 or 21-25 size shrimp, two sets of 1 ½ inch sized red onion, red bell pepper, yellow bell pepper and green bell pepper on a skewer in this pattern:
(1 Shrimp, red onion, red bell pepper, yellow bell pepper and green bell pepper, 2 shrimp, red onion, red bell pepper, yellow bell pepper and green bell pepper, 1 shrimp)
Spray with olive oil (Trader Joe’s has an Olive Oil Mist) and season liberally with Lawry's Sweet Basil, Citrus and Garlic Rub.
Grill them for 3 to 4 minutes on each side.
