Two Day Meal Plan for Boat or RV Trip

Place this delicious mix of chicken, vibrant veggies, and aromatic herbs and spices on foil
Dinner: Foil Meal on the grill or in the oven: Mediterranean Chicken and Cooked Quinoa
Dinner: Grilled Salmon with Montreal Steak Seasoning | Vigo Rice and Beans | Arugula, Goat Cheese, Pistachio and Beet Salad
Lunch: Leftover Mediterranean Chicken and Quinoa
Lunch: Asian Salad Kit with 1/2 can of drained Chickpeas
Breakfast x 2: Pancakes, Syrup, Fried Eggs and Fruit
Snacks: Nuts, Mozzarella Cheese Sticks, BOOMCHICKAPOP Sweet and Salty Kettle Corn Popcorn
Beverages: Coffee, Tea, Beer, Wine, Soda
Food Items Needed
- 1 Pound Salmon or steelhead
- 2 Tbs Butter or Olive Oil (for Rice)
- 3 Large Chicken Breasts
- 4 Eggs
- Arugula
- Asian Salad Kit
- Beets, Cooked or homemade
- Beverages: Wine, Beer, Soda, Coffee, Tea

- Canola Oil
- Fruit for 2 Breakfasts: choice of blueberries, strawberries, bananas, oranges, apples, canned peaches
